Neoprene wetsuit hood - available in various sizes and in 3mm and 5mm. 

Quick tip: 3mm would be fine for most places in the North Island during winter. If you're good with the cold, 3mm would be fine for most of South Island. If you're not, the 5mm is a safer bet.
